This is about as wine hipster as one can get. Cour-Cheverny is a tiny sub-appellation in the Loire and it produces a virtually unheard of grape called Romorantin, which everyone just calls “Romo.” The most famous producer of Romo is François Cazin, the owner of Le Petit Chambord. It is sleek, precise, and a fabulous wine for summer. Natural methods are de rigueur for Cazin and the wine is bottled unfiltered using the gravity method. Low in sulfites, it is an excellent choice for service as an aperitif or paired with seafood.
