Located on the western edge of the Côte de Beaune, the vineyards of Saint-Aubin consists of two areas of distinct mesoclimate: one exposed to the south and southeast on chalky limestone soils and the other with a cooler, more eastern exposure on soils with more gravel and clay. With characteristic aromas and flavors of hazelnut, peach and oak, this medium-bodied wine’s fine balance is aided by fresh acidity. It will develop in bottle for five to eight years. Serve this wine with fish, white meats, flaky pastry dishes, and strong cheeses.
