Slow roasting agave in traditional brick ovens, small batch distillation, and an ultra slow filtration process inherent to Avion gives the Anejo its distinct flavor and smoothness. It certainly helps that its been aged for two years in oak barrels, which give it its vanilla, caramel, coconut, maple, and roasted agave on the palate and its fruity aromas of peach and cherry on the nose. This anejo isn't like other anejos--it's an Avion Anejo, and it shows.
