    Founded in 1981, this domaine now cultivates 10 hectares of vines spread throughout six communes in Cote de Beaune. In order to limit yields, achieve appropriate maturity, and preserve the richness of the terroir, Claude and Catherine Maréchal avoid chemicals in the vineyards, thin the clusters, and harvest the grapes by hand. Once they arrive at the winery, bunches of Pinot Noir grapes are carefully sorted and destemmed. Fermentation takes place thanks to natural yeasts from the terroir, and a cold maceration lasts over twenty days. Once pressed, the wines are funneled into oak barrels for a period of 12 to 18 months. During this time they are aged on the lees to encourage the expression of their aromas, as well as their finesse and fullness. The ripe, suave tannins offer a great red wine that is both enjoyable and easy to drink.
