In 1971 Michel Hippolyte joined his father and soon after in 1983 he started working with Kermit Lynch Imports. In true Kermit Lynch fashion the vineyards of Hippolyte Reverdy see no pesticides, the yeasts are of indigenous nature and no extra sulfites added. Very pure and fresh, this wine broadens itself once on the palate and you literally taste it from the moment it hits your lips until if trails off the back of your tongue. Oysters, clams or lobster create singular harmony with this fabulous effort.

    The highest peak in Sicily is Mount Etna, an active volcano on the east coast of Sicily. It is on the northern side of this mountain that we find the vineyards that produce the Tascante Ghiaia Nera. Here the vines of the Nerello Mascalese grape grown in the volcanic soil in the Piano district of Catania. The grapes grown here flourish and ripen in the hot Sicilian summer before being picked in mid to late October. It is these warm days that gives this wines its fresh and ripe flavor and showcases the true personality of this native grape of Sicily. Upon pouring this wine you will first notice its cherry red color in the glass and in the mouth you are treated to a bright, fresh taste and soft tannins. It is the easy drinkability of this wine which makes it fine on its own, but also makes it very food friendly. Our suggestion would be to dig out a traditional Sicilian recipe of Pasta alla Norma, Braciole di Manzo or a basic Ragu and you will instantly transported to Italy's most famous island.

Start to gather your Fall recipes because you will want them at the ready when the mercury starts to drop and you are ready to open up wines of a heartier nature.

    The Chateau de Beaucastel Chateauneuf du Pape and Beaucastel is known for planting all 13 grape varietals allowed by AOC Law The rocky terraine reflects the sunlight and holds the heat from the sun and transfers the heat to the vines after sunset. Beaucastel farms their property using sustainable farming techniques and, in fact, was one of the first estates in Chateauneuf du Pape to begin to farm their vineyards organically. Given a solid 97, the Robert Parker review reads as follows: 97 points Robert Parker's Wine Advocate Bottled only a week before my visit, I was blown away by how well Beaucastel's 2016 Chateauneuf du Pape was showing. It's full-bodied, creamy, lush and rich, with layers of raspberry fruit, garrigue and spice that unfold across a seamless palate. No doubt it will go through cycles of being open and closed throughout its lifespan, but it would be a mistake to simply order a case, put it into storage and forget about it without trying one first and swooning over the sheer lusciousness and youthful complexity.

    The clay and chalk soil of the central Côte de Beaune is very stony, drains well and warms easily. In the vineyards, sustainable viticulture helps ensure high-quality fruit. The grapes are handpicked and sorted, then gently pressed and fermented in oak without artificial temperature control. Distinctive, concentrated fresh fruit and vanilla aromas carry on to the palate and culminate in a persistent, lingering finish. Puligny produces wines with greater firmness and depth than those of Meursault, and greater refinement and delicacy than those of Chassagne. An excellent companion to fish, shellfish, poultry, and cheeses.

    A top the hierarchy of Beaujolais Crus are Moulin-à-Vent and Morgon, with notable ageing potential. Morgon is robust and structured and can mature for a minimum 5-20 years. Very deep in color, this wine - blend of three single vineyards (Bellevue, Côte du Py & Roche noire) - shows a brilliant and large aromatic palette (spices, ripen black fruit). On the palate, the tannins are still a bit firm - which indicates the potential of ageing – and they are well balanced by a great tension. This wine is a perfect partner for charcuterie, pasta in a rich cream sauce, pizza and pretty much any meat.

    From the moment your pour this vintage of Dunn Vineyards Howell Mountain Cabernet (Rated 95 from Robert Parker) into your glass the black/purple color and dark, brooding bouquet tells you that this effort by the Dunn’s is one produced from relatively low yields. On the palate, the big, fat and juicy mouthfeel overtakes your taste buds. Flavors of crème de cassis, blackberry and licorice are all present in this multilayered wine. While the vineyard is not run by Randy and Lori’s son Mike, you will notice that the wine is slightly riper than how his Dad crafted. This wine, while superb now, will drink well for the next 30 to 40 years. The Dunn Howell Mountain Cabernet Sauvignon is an extraordinary red wine from California, and a great addition to any cellar.

    Direct from Santa Barbara, the Chanin Los Alamos Chardonnay is a terrific effort from winemaker Gavin Chanin. After working at vineyards from California to South Africa to New Zealand, Gavin Chanin launched Chanin Wine Co. in 2007. This vintage of Chanin Los Alamos Chardonnay enjoys the sunlight from high elevations (900ft) to cool marine influence of the Pacific. This yields a Chardonnay that shows off nuances of apricot and peach while offering buttery notes, smoke and chamomile in the mouth. If you are looking for wine to go with a roasted bird of any type, look no further.
