A visit to Chablis 2 years ago was the inspiration for Neyers winemaker Tadeo Borchardt's experiment with stainless steel fermentation. He procured the highest grade stainless steel, which 304 refers to, and the results were quite impressive. Harvested at 23-24% sugar and whole-cluster pressed, the wine delivers a redolence of citrus and ripe pear, and flavors of crisp apples and cut flowers. this one is a bit of a show-stopper that performs well past its price point.
