Hearty mid-winter meals in front of the blazing hearth call for a wine with the gusto to match. The primary grape is Corvina (85%) with a little Rondinella (10%) and Oseleta (5%) blended in, and a second passing of the wine over the skins creates an intensely flavored and aromatic style perfectly suited for this time of year. The process also increases alcohol content and deepens the color. First aged in tanks for six months and then aged in French barrels for 18 months, before being aged in bottle for an additional six months before being released. This is pretty brawny stuff, deep, powerful and very full flavored and would pair well with veal chops, venison or grilled meats.
